I’m a toppings kind of girl for chili, sandwiches, wraps, pizza- anything really, so I hesitated to make these a last minute dinner with a fridge so empty from toppings, but I need to remind myself that crock pot salsa chicken can hold its own just fine. Though I think my cutting skills are sub-par since it took me about 30 minutes to prep rather than the 15 I anticipated, it did make for a healthy weeknight switch up. I honestly don’t do a lot of stir fry meals, but I was drawn to this one because it was packed with so many fresh veggies. Then I piled it on roasted potatoes, roasted Brussels, tomatoes and kraut. There is no recipe, though I use this homemade BBQ sauce and this method of cooking the pork. I couldn’t remember if I had shared this one before, but it’s a really comforting bowl of deliciousness for colder months. Pulled Pork and Roasted Veggie Bowls with Kraut When made at home I can control the toppings, amount of cheese, type of chips ( or use roasted sweet potato rounds!) etc and I can pile on as many delicious veggies as I’d like. And yes, I do actually consider them a healthy dinner idea. It’s something I’ve perfected over the years and they’re always delicious because, well, you can’t really mess up nachos and you can use whatever toppings you desire. I really should dedicate an entire post to how I make nachos. I am excited to eat the leftovers again for lunch today and am grateful it made a large portion. It definitely satiated my appetite and I will make it again, maybe with a 1/2 tsp of cayenne for a little kick (love my spice!) and sprinkle in a little more salt, as I’m always worried about over-salting on the first go ’round. I don’t often do vegetarian dinners because so many that I’ve tried leave me feeling unsatisfied, but this one was a hit! I loved the coconut curry flavor and the heartiness of the lentils. Golden Red Lentil Dal with Cilantro Speckled Basmati Switching the quartered potatoes in the meal for mashed red potatoes as a base was a good move, as I was able to soak up all the gravy so I didn’t waste a bite. I used stew meat instead of a chuck roast and it worked great. I put them all in a photo folder labeled meals lately, and once it hits 6 or 7 pictures, I feel it’s a good time to toss them into a post! I don’t take pictures of my food as often as I once did when I wrote in a more diary-esque style, but I do still snap pictures of dinners occasionally to share and look back on myself during meal planning ruts. As a family we are picking up the pieces, holding onto the memories and moving forward. This week has been all over the place with obvious lows and still some tears, but several highs too in the form of support and kindness, and also my mom coming to stay for a couple days. It feels amazing to pour my heart out, but it also feels good to get back to my routine. To be honest, I’m not quite sure how to transition back into my normal blogging, but I’m ready to.
